Lemon Bars

Lemon BarsI love lemon desserts, but I've never made lemon bars. A fellow foodie over at m's project journal made lemon bars last week as did Ellie from Kitchen Wench, so I felt inspired to do the same. These are tart lemon bars that are a welcome reprieve from the sweeter dessert fare.

It's like a lemon meringue pie with a shortbread crust and no meringue. Tangy, delicious, and especially good with Dorie Greenspan's peppermint cream.

Bottom
The bottom is a shortbread-like crust that you can easily push into the pan using a measuring cup or your fingers. Ellie's has icing sugar and vanilla that might be even more flavorful, but I used m's version. Then you bake it in the oven for a bit.

Middle
The filling is easy because you just whisk it and then bake it off (after you've baked the crust).

Top
Dust with icing sugar, and you're done. You can top with peppermint cream for even more decadence.

the lemon bar bandwagon is a good one to jump on, i think--yum! and double yum with peppermint whipped cream...i bet they were perfect together!

Shari, I'm a complete sucker for all things lemon, but like you, I have never made lemon bars. I think it's time I correct that!

There is no dessert I love more than Lemon meringue pie - Lemon bars being its more civilised encarnation; yours look absolutely wonderful.

The peppermint cream is inspired, and a great idea.

Thanks for dropping by! Lemon bars are so easy to eat with your fingers (unlike the fussy lemon meringue pie that requires plate and fork and frou frou). I'm a new fan of this dessert!

Hello there!
I tried making lemon bars but i had trouble taking them out of the pan after they were cooled. I did butter the pan before pouring in the filling...is there anything I missed here? Is there a baking secret to be able to easily remove the lemon bars out of the pan? Thanks so much!!
